Nurtured from the ground up

Every vine and the soil it grows in is meticulously cared for – from the best foundation the finest fruit flourishes.

Over the dormant season the vines are pruned, the sheep are bought in to keep the grass down, we carry out soil maintenance, and we put frost protection measures in place.

In spring the leaves burst forth, followed by the tiny buds that will develop into flowers and then into exquisite fruit.

From there the level of care and attention reaches fever pitch. When the flowers are fully developed, just one per shoot is selected to stay on the vine to grow into a bunch of grapes, with the rest of the flowers carefully removed.

As the season continues to warm, each of the remaining bunches is hand-thinned three times to increase fragrance and sweetness, then covered by delicate paper and further protected by a little umbrella shade.

That level of care and attention, honed over centuries by grape-growing specialists, reflects that for Japanese table grape connoisseurs the grape is the ‘king of fruit’.
